Which place in Thailand is best for Teaching/Living?

Chiang Mai is the best. The teachers there all seem to stay for years and years. It is kind of like living in Vermont, USA. Really close knit community, lots of outdoor activities, excellent food and a cheap place to live. Lots of foreigners so you are accepted more than other places in Thailand.
